1 small head lettuce
2 - 3 tomatoes diced
8 oz. cheddar cheese, shredded
1 can Kidney Beans, drained & rinsed
1 small onion, minced or diced (I just sateed this with ground meat)
1 Russian salad dressing
1/2 bag taco flavor Doritos (I used other tortilla chips), crushed
1 lb ground meat (either beef or turkey work well; even small shrimps work well)
1 cucumber, diced (optional)
1 carrot, chopped small/shredded (optional)

I sautéd ground meat (either beef or turkey) with minced/diced onion with a bit of onion soup mix and cool it, before mixing with all the other ingredients before serving.
Very simple, but absolutely delicious! :)
